Yogurt tiramisu has been one of the most shared dessert ideas on social media this year. It keeps the familiar layers of coffee-soaked biscuits and creamy filling, but uses thick yogurt in place of most of the cream.
Ingredients for 4 glasses
- 500 g thick plain Greek yogurt
- 1 cup strong cooled coffee or espresso
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- About 16 ladyfinger biscuits or Lotus Biscoff cookies
- Unsweetened cocoa powder for dusting
Steps
- Mix the yogurt, honey, and vanilla until smooth.
- Dip each biscuit very briefly into the coffee and place it in the bottom of a glass.
- Spoon a layer of yogurt over the biscuits, then add another biscuit layer and yogurt.
- Cover and chill for at least 4 hours so the biscuits soften.
- Dust with cocoa just before serving.
Tips
- Strain the yogurt in a sieve for 30 minutes for a thicker texture.
- Use decaf coffee if you want to serve children or avoid caffeine in the evening.
- Those with diabetes can use a sugar-free sweetener and smaller portions.
