Bone broth soup is widely searched, and many people make it at home for warmth and simplicity. Its benefits are often overstated, so it is worth separating claims from evidence.
Simple bone broth soup (4 servings)
- 1 kg bones or chicken carcass
- 2 carrots, 1 onion, 2 celery sticks
- 1 bay leaf, peppercorns, salt
- 2 liters water
- Optional: cooked chicken and noodles
Steps
- Simmer the bones with water and a splash of vinegar for 20 minutes, then drain.
- Return the bones to the pot with vegetables and spices. Simmer gently for 4 to 6 hours.
- Strain and season. Add cooked chicken and noodles if you like.
What the evidence says
Broth is a warm, hydrating food with some protein and minerals, but studies do not prove that it heals joints or the gut. Those with kidney disease or on a low-sodium diet should check with a doctor and limit salt.
