Ube Dessert at Home: How to Use the Purple Yam Trend

Ube is a purple yam from the Philippines. Its natural color is striking and its flavor is gently sweet and nutty, which has made it a favorite in desserts, drinks, and cakes.

Ube milk pudding (4 small glasses)

  • 1/2 cup cooked and mashed ube (fresh or frozen)
  • 2 cups milk or coconut milk
  • 1/3 cup sugar
  • 2 tablespoons cornstarch mixed with 3 tablespoons cold water
  • 1/2 teaspoon vanilla
  • Toasted coconut flakes to serve

Steps

  1. Blend the ube with half the milk until smooth.
  2. Pour into a pan with the rest of the milk and sugar. Heat gently, stirring.
  3. Add the cornstarch mixture and stir until thick, about 3 minutes.
  4. Stir in vanilla, pour into glasses, and chill for 2 hours.
  5. Top with toasted coconut.

Tips

  • Use ube extract if fresh ube is hard to find, but check the label for added sugar.
  • Keep portions small if you are managing blood sugar.
