Quick pickles are a popular home project because they do not need a long fermentation. A simple vinegar brine gives you crisp cucumbers in about an hour, and they keep in the fridge for a few weeks.
Ingredients for one 500 ml jar
- 2 small cucumbers, thinly sliced
- 1/2 cup white vinegar
- 1/2 cup water
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 garlic clove, sliced
- A few dill sprigs and black peppercorns
Steps
- Heat the vinegar, water, sugar, and salt until the sugar dissolves. Let cool slightly.
- Pack the cucumber, garlic, dill, and peppercorns into a clean jar.
- Pour the brine over the cucumbers until covered.
- Cool to room temperature, then refrigerate for at least one hour.
Tips
- Use fresh, firm cucumbers for the crispest result.
- Keep pickles refrigerated and use within three weeks.
