Persian (Iranian) cuisine is one of the oldest and most refined food traditions in the world. It is built on fragrant rice, slow-cooked stews, fresh herbs, nuts, dried fruit and a careful balance of sweet and sour. This guide explains how the cuisine works, which ingredients you need and which recipes to cook first.
What makes Persian food special
- Balance of sweet and sour. Pomegranate molasses, dried limes, barberries, sumac and lemon juice are paired with onions, nuts, dates and saffron.
- Herbs by the handful. Parsley, coriander, dill, fenugreek, mint and chives are used in stews, rice and egg dishes.
- Rice as the center of the meal. Persian rice is parboiled and then steamed, which gives long, separate grains and a crisp golden crust called tahdig.
- Slow cooking. Many stews (khoresh) simmer for hours until the flavors blend.
- Aromatics. Saffron, turmeric, cinnamon, cardamom, rose water and dried lime give Persian dishes their signature scent.
