Quick Pickled Cucumbers: Crisp Pickles Ready in One Hour

Quick pickles are a popular home project because they do not need a long fermentation. A simple vinegar brine gives you crisp cucumbers in about an hour, and they keep in the fridge for a few weeks.

Ingredients for one 500 ml jar

  • 2 small cucumbers, thinly sliced
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 garlic clove, sliced
  • A few dill sprigs and black peppercorns

Steps

  1. Heat the vinegar, water, sugar, and salt until the sugar dissolves. Let cool slightly.
  2. Pack the cucumber, garlic, dill, and peppercorns into a clean jar.
  3. Pour the brine over the cucumbers until covered.
  4. Cool to room temperature, then refrigerate for at least one hour.

Tips

  • Use fresh, firm cucumbers for the crispest result.
  • Keep pickles refrigerated and use within three weeks.
