Kotlet is the golden, savory cutlet that almost every Iranian family has on the table once a week. Ground beef is mixed with grated onion and mashed potato, shaped into oval patties and fried until crisp outside and tender inside. As the evenings get cooler and school and work routines settle in, it is a dish that makes a busy weeknight feel like a proper home-cooked meal.

Why kotlet works for busy households

The potato is the secret. It keeps the cutlets soft, stretches a modest amount of meat to feed a whole family, and makes them gentle enough for children. Kotlet is also very forgiving: you can shape the mixture ahead, fry in batches, and serve hot or at room temperature. That is why it is a favorite in lunchboxes and on picnic tables, tucked into bread with pickles and fresh herbs.

Tips for tender, crisp cutlets

  • Dry the potatoes. After boiling, let the potatoes steam-dry for a few minutes before mashing. Wet potato makes a loose mixture that falls apart in the pan.
  • Squeeze the onion. Grate the onion and press out the juice with your hands. Too much liquid is the most common reason cutlets break.
  • Knead well. Mix the meat for a couple of minutes until it feels sticky and holds together. This replaces the need for much flour or breadcrumbs.
  • Rest the mixture. Thirty minutes in the fridge firms it up and makes shaping with damp hands much easier.
  • Mind the heat. Medium heat cooks the center through while the outside turns golden. If the oil is too hot, the outside darkens before the meat is done.

Variations

  • Chicken kotlet: use ground chicken and add a little extra seasoning, since it is milder than beef.
  • Lighter version: brush the patties with oil and bake on a lined tray at 200°C (400°F) for about 25 minutes, turning once.
  • Herby kotlet: add a handful of finely chopped parsley or a spoonful of tomato paste to the mixture.
  • Extra flavor: a pinch of cinnamon, cumin or a little saffron water is common in some regions.

Serving ideas

Serve kotlet the Iranian way with warm flatbread, sliced tomatoes, fresh herbs, and torshi or pickled cucumbers. It is excellent in a sandwich with yogurt and lettuce, and also goes well with rice and a simple Shirazi salad. For a family meal, add a plate of fresh radishes and a bowl of yogurt with cucumber.

Storage

Cooked cutlets keep in the fridge for up to three days in a sealed container. Reheat in a skillet or oven so the crust crisps again. You can also freeze the shaped, uncooked patties on a tray, then bag them: fry straight from frozen over low to medium heat until cooked through. Always cook ground meat until it is no longer pink in the center and reaches 71°C (160°F) inside.
