Mushroom Wellington is a vegetarian take on the classic beef Wellington: a savoury filling of roasted mushrooms, chestnuts and walnuts, wrapped in golden puff pastry and sliced like a roast. It tastes deeply earthy and rich, and it is searched for more every year as hosts look for a main dish that vegetarians and meat-eaters will both happily share. With Thanksgiving on November 26 and Christmas not far behind, now is the ideal time to practise it.
Why it works as a centrepiece
Mushrooms cooked until completely dry concentrate their flavour, while chestnuts add a gentle sweetness and walnuts bring body and a little bite. Soy sauce and thyme supply the savoury depth people expect from a roast. Best of all, you can assemble the whole Wellington a day ahead and simply bake it when guests arrive, which frees the oven and your attention on the big day.
Tips for a crisp, not soggy, pastry
- Cook the mushrooms dry. Chop them finely and cook until the pan is nearly dry and the mixture looks like a thick paste. Any water left in the filling will soften the pastry.
- Cool the filling completely. Warm filling melts the butter in the pastry and stops it puffing.
- Add a barrier. A layer of wilted, squeezed-dry spinach and a sprinkle of breadcrumbs under the filling soaks up moisture.
- Seal and chill. Tuck the seam underneath, brush with egg wash and chill for 20 minutes before baking so the shape holds.
- Bake on a hot tray. Preheating the baking sheet crisps the underside.
Ingredient notes
Cremini (brown) mushrooms are widely available and give the best flavour for the price; a mix with a few shiitake is lovely. Cooked, peeled chestnuts come vacuum-packed or in jars at most supermarkets in autumn. If you cannot find them, use extra walnuts or pecans. Check the puff pastry label: many brands are accidentally vegan, and all-butter versions taste best.
Variations
- Vegan: use vegan puff pastry, swap butter for olive oil and brush with plant milk and a little maple syrup.
- Cheesy: add 100 g crumbled goat cheese or a layer of Gruyère. Note that Parmesan is not vegetarian.
- Persian-inspired: stir a pinch of saffron and a spoonful of chopped dried barberries or cranberries into the filling for a sweet-tart note.
- Individual portions: cut the pastry into squares and make small parcels that bake in 25 minutes.
Serving ideas and menu
Serve slices with a glossy onion gravy, roasted carrots with thyme, creamy mashed potatoes and a tart cranberry sauce. A crunchy shaved Brussels sprout salad cuts through the richness. Many vegetarian guests also appreciate a nutty, herby stuffing on the side.
Make-ahead and storage
Assemble the unbaked Wellington up to 24 hours ahead, cover and refrigerate, adding the egg wash just before baking. You can also freeze it unbaked for up to a month and bake from frozen, adding about 15 minutes. Leftover slices keep in the fridge for three days; reheat on a tray in a 180°C / 350°F oven so the pastry crisps again rather than in the microwave.
Who should be careful: the dish contains gluten, egg and tree nuts (walnuts and chestnuts are different allergens), so label it clearly for guests with allergies.

Method
Heat the olive oil and butter in a large wide pan and cook the shallots for 3 minutes until soft, then add the garlic and thyme for 30 seconds.
Add the mushrooms and cook over medium-high heat for 12 to 15 minutes, stirring often, until all the liquid has evaporated and the mixture is dry and golden.
Stir in the soy sauce, wine and mustard and cook until absorbed, then fold in the chestnuts and walnuts, season with the salt and pepper and cool completely.
Wilt the spinach in a dry pan, cool it, squeeze out all the water and chop finely.
Preheat the oven to 200°C / 400°F and place a baking sheet inside to heat.
Roll out the puff pastry on parchment, sprinkle the breadcrumbs down the middle, add the spinach and then the cooled mushroom filling, and shape it into a firm log.
Fold the pastry over the filling, seal the seam and ends, and turn it seam-side down. Chill for 20 minutes.
Brush with the egg wash, score a light crosshatch pattern and slide the parchment onto the hot baking sheet.
Bake for 35 to 40 minutes until deep golden and puffed, then rest for 10 minutes before slicing with a serrated knife.
Tips
- Cook the mushrooms until completely dry so the pastry stays crisp.
- Cool the filling fully before wrapping.
- Assemble up to 24 hours ahead and add the egg wash just before baking.
