No-knead bread is the closest thing home bakers have to a magic trick: you stir four ingredients together in a bowl, leave the dough alone overnight and the next day bake a loaf with a blistered, crackling crust and an open, chewy inside. It needs no mixer, no kneading and no special skills, only time and a heavy lidded pot.

The method became famous after baker Jim Lahey and the New York Times popularized it in 2006, and it is still one of the most-made bread recipes because it works so reliably. If you have never baked bread before, start here.

Why no kneading is needed

Kneading builds gluten, the stretchy network that gives bread structure. A wet dough rested for 12 to 18 hours builds that network by itself as the flour hydrates and the yeast slowly works. The long rest also gives much more flavor than a quick rise.

Why a Dutch oven

A preheated heavy pot with a lid traps the steam released by the dough, which keeps the crust soft while the loaf expands, then lets it set into a thin, crisp, golden shell once the lid comes off. If you do not have a Dutch oven, any heavy oven-safe pot with a lid will work.

Tips for success

  • Measure the flour by weight if you can: 400 g flour and about 300 g water. A cup-measured dough can come out too dry or too wet.
  • The dough should be shaggy and sticky. Do not add more flour; wetness makes the open crumb.
  • Use a warm spot, but not a hot one. About 20 to 22 C (68 to 72 F) is ideal. In a cold kitchen, give it up to 18 hours; in a warm one, 12 hours is enough.
  • Preheat the pot for a full 30 minutes so the loaf gets strong heat from below.
  • Cool the bread completely. Slicing too early makes the crumb gummy because it is still setting.

Variations

Add a handful of olives, rosemary, grated cheese or toasted seeds when you mix the dough. For a nuttier loaf replace up to a quarter of the flour with whole wheat. Another fall favorite is our No-Knead Cranberry Walnut Bread.

Storage

Keep the loaf cut side down on a board for a day, or in a paper bag for up to 2 days. After that, slice and freeze it; toast slices straight from the freezer. Refresh a stale loaf by sprinkling it with water and warming it in a hot oven for 8 minutes.

Frequently asked questions

Can I use instant or active dry yeast?

Yes. Instant yeast can be stirred in directly. Active dry yeast should be dissolved in a little of the warm water first. The amount in the recipe is small because the rise is long.

Why is my loaf flat?

The dough may have over-fermented in a very warm room, or it may have been shaped too roughly. Handle it gently and shorten the rise on warm days.

Do I need a scale?

It is not required, but weighing flour and water makes the result much more consistent.

Method

  1. In a large bowl, stir together the flour, salt and yeast. Add the water and mix with a spoon until there are no dry patches. The dough will be shaggy and sticky.

  2. Cover the bowl and leave it at room temperature for 12 to 18 hours, until the surface is bubbly and the dough has more than doubled.

  3. Dust a work surface with flour. Scrape the dough out, fold the edges toward the center a few times to make a rough ball and place it seam side down on a sheet of parchment. Dust the top lightly, cover and rest for 30 to 45 minutes.

  4. About 30 minutes before baking, place a lidded Dutch oven in the oven and heat it to 230 C (450 F).

  5. Carefully lift the dough with the parchment into the hot pot, cover and bake for 30 minutes.

  6. Remove the lid and bake for 10 to 15 more minutes until deep golden brown. Lift the loaf out and cool on a rack for at least 1 hour before slicing.

Tips

  • Weigh the flour and water for reliable results.
  • Do not add extra flour; the sticky dough makes the open crumb.
  • Cool the loaf fully before cutting.
