Tortilla española is Spain’s most beloved everyday dish: a thick, golden omelette of thinly sliced potatoes and onion, slowly cooked in olive oil and set with eggs until it is custardy in the middle and lightly crisp outside. Unlike a French omelette it is served in wedges, warm or at room temperature, which is why it turns up at tapas bars, picnics and potlucks across Spain, and why it is quietly becoming a favourite for brunches and make-ahead holiday mornings elsewhere.

It needs only five pantry ingredients, costs very little and feeds a crowd. The trick is not the ingredients but the patience: potatoes are gently poached in oil rather than fried hard, so they turn tender and sweet.

Which potatoes and what pan?

Use a waxy or all-purpose potato such as Yukon Gold, Charlotte or Maris Peer. Floury potatoes such as russets fall apart, which gives a softer, mashed texture some cooks like, but they hold the shape less well. A 9 to 10-inch (23 to 25 cm) non-stick or well-seasoned skillet with sloping sides makes flipping far easier.

Tips for a tender, juicy tortilla

  • Keep the oil gentle. The potatoes should bubble softly, never sizzle hard or brown. Pale and soft is the goal.
  • Drain, but save the oil. Strain the potatoes well, then strain the oil and keep it for sautéing or roasting later.
  • Rest the mixture. Stir the warm potatoes into the beaten eggs and wait 10 minutes. The eggs soak into the potatoes and the centre stays creamy.
  • Season the eggs well. Potatoes absorb a lot of salt, so taste the egg mixture with a little pinch before cooking if you like.
  • Flip with confidence. Place a large plate over the pan, turn it over in one quick motion at the sink, then slide the tortilla back in. Use a pot lid if you have no flat plate.
  • Choose your centre. Spanish cooks call a runny middle jugosa. Cook 2 to 3 minutes per side for jugosa, or 5 minutes per side for a fully set tortilla.

Variations

  • With caramelised onions (the classic debate: con cebolla is the usual answer).
  • With chorizo, roasted red peppers, spinach or zucchini folded in.
  • Served in a baguette as a bocadillo de tortilla, a classic sandwich.
  • Topped with garlic aioli or a spoonful of roasted tomato sauce.

Serving ideas

Cut into small squares and serve on toothpicks as a tapas platter with olives, manchego and jamón. For a brunch table, pair wedges with a green salad dressed with sherry vinegar and a bowl of fresh fruit. It is also an easy make-ahead dish for Thanksgiving or Christmas morning, because it tastes just as good served at room temperature.

Storage

Cool completely and refrigerate, wrapped, for up to 3 days. Serve cold, at room temperature, or warm gently in a low oven. It is not ideal for freezing because the potatoes turn watery. Anyone with an egg allergy should avoid it, and pregnant readers should make sure the centre is fully set rather than runny.

Method

  1. Peel the potatoes, slice them about 3 mm thin and toss with the sliced onion and half the salt.

  2. Heat the olive oil in a 23 to 25 cm non-stick skillet over medium-low heat, add the potatoes and onion and cook gently for 20 minutes, turning often, until completely tender but not browned.

  3. Drain the potatoes well in a sieve over a bowl and keep the oil for another use.

  4. Beat the eggs with the remaining salt in a large bowl, fold in the warm potatoes and onion and rest for 10 minutes.

  5. Wipe the skillet, heat 1 tablespoon of the saved oil over medium heat and pour in the mixture, pressing it flat.

  6. Cook for 4 to 5 minutes until the edges are set, then place a large plate over the pan and flip the tortilla onto it.

  7. Slide the tortilla back into the pan and cook for 3 to 5 minutes more, depending on how juicy you like the centre.

  8. Rest for 5 minutes before cutting into wedges and serve warm or at room temperature.

Tips

  • Keep the oil at a gentle bubble so the potatoes stay pale and tender.
  • Resting the egg and potato mixture for 10 minutes keeps the centre creamy.
