Joojeh kebab (also spelled jujeh kabab) is one of Iran’s best-loved dishes: tender chunks of chicken marinated in saffron, lemon, onion and yogurt, threaded on skewers and cooked until golden at the edges and juicy inside. The flavour is gently floral and bright rather than spicy, which is why it is such an easy dish to serve to guests and to children. It has been climbing in English-language searches as more cooks look for saffron chicken, Mediterranean-style grilling and make-ahead dinners, and it works just as well in a hot oven or a cast-iron pan as it does on a barbecue, so you can cook it all through the cooler months.

Where it comes from and what makes it special

In Iran, joojeh kebab is a restaurant staple served with a mound of buttery steamed rice, a grilled tomato and a sprinkle of sumac. “Joojeh” simply means young chicken. The classic marinade has three jobs: onion juice and lemon juice tenderise the meat, yogurt keeps it moist, and saffron gives the famous golden colour and perfume. Traditionally the chicken is cut from the bone-in breast and thigh; at home, boneless thighs are the easiest and most forgiving choice.

Tips for the best joojeh kebab

  • Use thighs if you can. They stay juicy even if you cook them a minute too long. If you prefer breast meat, cut larger pieces and watch the time closely.
  • Grate the onion and squeeze it. Use the juice and a little of the pulp. Too much raw onion pulp can burn on the grill.
  • Bloom the saffron properly. Grind the threads with a pinch of sugar, then steep in hot (not boiling) water for 15 minutes. Good saffron is sold in small jars or tins online and in many Middle Eastern, Indian and Spanish shops; a little goes a long way.
  • Marinate 8 to 24 hours. The lemon makes chicken mushy if left much longer than a day, so do not push past 24 hours.
  • Do not crowd the skewers. Leave a small gap between pieces so the heat reaches every side. Flat metal skewers hold the meat best; if you use wooden ones, soak them for 30 minutes.
  • Brush with saffron butter at the end. A spoonful of melted butter mixed with leftover saffron water keeps the kebab glossy and rich.

Cooking methods

Grill: medium-high heat, about 12 to 15 minutes, turning every 3 to 4 minutes, until the edges are lightly charred and the juices run clear (74°C / 165°F inside).

Oven: put the skewers on a rack over a lined tray and cook at 230°C / 450°F for 18 to 20 minutes, turning once, then finish under the broiler for 2 minutes for colour.

Skillet: slide the chicken off the skewers and sear in a hot cast-iron pan in batches, 4 to 5 minutes per side.

Serving ideas

Serve joojeh kebab the Persian way with fluffy basmati rice, a grilled tomato, and a spoonful of butter on the rice. Add a simple Shirazi cucumber-tomato salad, plain yogurt or mast-o-khiar (yogurt with cucumber and mint), and a pinch of sumac over everything. For a casual dinner, tuck the chicken into warm flatbread with salad and yogurt sauce. It also makes a great party platter with rice, herbs and pickles, and suits both weeknights and holiday tables.

Variations

  • Tomato paste kebab: add one tablespoon of tomato paste to the marinade for a deeper colour and sweetness.
  • Dairy-free: replace the yogurt with 2 tablespoons of olive oil and an extra splash of lemon juice.
  • With peppers and onion: alternate chicken with bell pepper and onion chunks on the skewers.
  • Bone-in version: use chicken drumsticks or a cut-up whole chicken and roast longer, about 35 to 40 minutes at 200°C / 400°F.

Storage and make-ahead

Marinated raw chicken keeps in the fridge for up to 24 hours or in the freezer for up to 2 months (thaw overnight in the fridge). Cooked kebab keeps for 3 days in an airtight container; reheat gently in a covered pan with a splash of water or in a 160°C / 325°F oven so it stays juicy.

Why it works for busy cooks

The work is done a day ahead: mix the marinade, add the chicken, and forget it. On the day you only need to skewer and cook for about 20 minutes, so it is a relaxed way to feed a family or guests while the rice steams.

    1. Grind the saffron with a pinch of sugar, stir in the hot water and let it steep for 15 minutes.

    2. Mix the grated onion, yogurt, lemon juice, olive oil, garlic, salt, pepper and two thirds of the saffron water in a large bowl.

    3. Add the chicken, turn to coat, cover and refrigerate for 8 to 24 hours.

    5. Cook for 12 to 15 minutes on the grill, turning every 3 to 4 minutes, or 18 to 20 minutes in the oven, until golden at the edges and 74°C (165°F) inside.

    6. Stir the remaining saffron water into the melted butter and brush it over the hot kebabs.

    7. Rest for 3 minutes and serve with rice, grilled tomatoes and sumac.

    Tips

    • Use thighs for the juiciest result and do not marinate longer than 24 hours.
    • Leave a small gap between pieces so they cook evenly.
