Spinach artichoke dip is a warm, bubbling blend of cream cheese, melted mozzarella, tender spinach and tangy artichoke hearts, served with crunchy dippers. It started as an American restaurant favourite and has become a fixture on holiday tables, which is why it is one of the most searched party appetizers every November.

With Thanksgiving on November 26, this is the right moment to plan your starters. The oven is usually busy with the turkey, so a dip that you assemble two days ahead and bake for 25 minutes (or warm in a slow cooker) takes real pressure off the big day.

Why this version works

  • Squeeze the spinach dry. Wrap thawed frozen spinach in a clean towel and wring it out hard. Extra water is the number one reason dips turn runny.
  • Soften the cream cheese. Leave it on the counter for an hour so it blends smoothly without lumps.
  • Chop the artichokes small. Use canned or jarred artichoke hearts packed in water, drained and patted dry. Marinated ones also work but make the dip tangier and oilier.
  • Use a mix of cheeses. Mozzarella gives the stretch, Parmesan gives the savoury depth.

Make-ahead plan

Mix the dip, spread it in the baking dish, cover and refrigerate for up to 2 days. Add 5 to 10 minutes to the baking time if it goes into the oven cold. Keep the final topping of cheese for just before baking so it browns nicely.

Variations

  • Extra fresh: swap half the spinach for finely chopped kale or sautéed leeks.
  • A little heat: add a pinch of red pepper flakes or a spoonful of chopped pickled jalapeños.
  • Lighter: replace the mayonnaise with plain Greek yogurt for a tangier, lighter dip.
  • Persian-inspired twist: stir in a spoonful of dried mint and a little lemon zest for a fresh, herby finish.

Serving ideas for your Thanksgiving table

Serve it hot in the baking dish with toasted baguette slices, pita chips, tortilla chips, celery sticks, mini bell peppers and cucumber rounds. Keep the dip small enough that guests still have room for dinner: one dish serves about 12 people as a starter.

Storage and reheating

Leftovers keep in the fridge for 3 to 4 days in an airtight container. Reheat in a 175°C (350°F) oven for 15 minutes or in the microwave in short bursts, stirring in between. Because the dip contains dairy, do not leave it out for more than two hours.

It is also delicious spread inside a sandwich or stirred through hot pasta the next day.
