A calzone is a folded pizza: a round of dough filled with melty cheese and your favourite toppings, sealed into a half-moon and baked until golden. It comes from Naples, Italy, and the name roughly means “trouser leg” (pants), a nod to how it was once eaten on the go. Unlike pizza, everything stays tucked inside, so calzones travel well, reheat beautifully and are perfect for game-day spreads, cold-weather dinners and lunchboxes.
Calzones are popular right now because they turn a humble ball of pizza dough into something that feels special, and they are easy to make ahead. Store-bought dough from the supermarket chilled or refrigerated aisle works perfectly, so this is a realistic weeknight project.
Why this calzone works
The filling is a simple mix of ricotta, mozzarella and a little Parmesan. Ricotta keeps the inside creamy rather than stringy, while low-moisture mozzarella melts without making the dough soggy. Pepperoni adds salt and spice, and a small amount of marinara goes inside, with more for dipping on the side. Too much sauce inside is the number one cause of leaks, so keep it modest.
Tips for a crisp, leak-free calzone
- Let the dough come to room temperature. Cold dough springs back and tears; relaxed dough stretches easily. Give it 30 to 45 minutes on the counter.
- Drain the ricotta. If it looks wet, spoon it into a sieve for 10 minutes. Watery filling steams the dough from inside.
- Leave a clean border. Keep about 2 cm (3/4 inch) of bare dough around the edge so it seals properly, then crimp with a fork or fold and pinch.
- Cut steam vents. Two small slits on top let steam escape so the seams stay shut.
- Bake hot. A very hot oven and a preheated baking sheet give a crisp base. Brush with beaten egg and olive oil for a deep golden, shiny crust.
- Rest before cutting. Five minutes lets the cheese settle so it does not pour out and burn your mouth.
Variations
- Spinach and mushroom (vegetarian): sauté mushrooms and squeeze well-drained cooked spinach very dry before mixing with the cheeses.
- Chicken and broccoli: a great way to use leftover roast chicken, with a little garlic and extra mozzarella.
- Ham and cheese: a kid-friendly version that is ideal for lunchboxes once cooled.
- Breakfast calzone: scrambled egg, cheddar and cooked sausage or spinach.
Serving ideas
Serve with warm marinara, ranch or garlic yogurt for dipping, plus a crisp green salad to cut the richness. For a game-day table, make mini calzones with smaller rounds of dough and set them out with a few dips.
Storage and reheating
Cool completely, then keep in an airtight container in the fridge for up to 3 days. To freeze, wrap each calzone individually and freeze for up to 2 months. Reheat from fridge or frozen in a 180 C (350 F) oven or air fryer for 10 to 20 minutes until hot in the centre; the oven keeps the crust far crispier than a microwave.

Method
Take the dough out of the fridge 30 to 45 minutes before you start so it relaxes. Place a baking sheet in the oven and heat it to 230 C (450 F).
Mix the ricotta, mozzarella, Parmesan, garlic and oregano in a bowl with a pinch of black pepper.
Divide the dough into 4 equal pieces. On a floured surface, stretch or roll each piece into a round about 20 cm (8 inches) across.
Spread 2 tablespoons of marinara over half of each round, leaving a 2 cm border. Top with a quarter of the cheese mixture and the pepperoni.
Fold the dough over the filling to make a half-moon, press the edges together and crimp with a fork so they are tightly sealed.
Cut two small steam vents in the top. Mix the beaten egg with the olive oil and brush it over each calzone.
Slide the calzones onto parchment, transfer to the hot baking sheet and bake for 20 to 25 minutes until deep golden brown.
Rest for 5 minutes, then serve with warm marinara for dipping.
Tips
- Drain the ricotta so the filling stays creamy, not watery.
- Do not overfill; a modest filling keeps the seams closed.
- Freeze unbaked or baked calzones individually wrapped for up to 2 months.
