Pecan pie is the dessert that quietly steals the show on an American Thanksgiving table: a crisp, buttery crust holding a glossy caramel-like filling and a crown of toasted pecans. It is also one of the easiest holiday pies to make ahead, which is exactly why it is worth planning now, about five weeks before Thanksgiving on November 26.
Why this pie works
The filling is a simple custard of eggs, brown sugar, syrup and melted butter. In the oven the eggs set the mixture just enough to slice cleanly, while the sugar turns deep and toffee-like. The pecans rise to the top and toast as the pie bakes, giving you crunch against the soft centre.
Tips for a clean slice and a crisp crust
- Blind-bake the crust briefly. Ten minutes with pie weights keeps the bottom from turning soggy under the wet filling.
- Toast the pecans first. Eight minutes in a 175 °C oven deepens their flavour. Let them cool before using.
- Do not overbake. The pie is ready when the edges are set and the centre still jiggles slightly like gelatin when you nudge the tin. It firms up as it cools. A knife-tip centre temperature of about 90–93 °C is a reliable sign.
- Shield the edges. If the crust browns too fast, wrap the rim loosely with foil.
- Cool completely. Give it at least 3 hours at room temperature before slicing, or the filling will run.
Variations
- Chocolate pecan: scatter 80 g of chopped dark chocolate over the crust before pouring in the filling.
- Maple pecan: replace half of the syrup with pure maple syrup for a more rounded sweetness.
- Warm spice: add half a teaspoon of cinnamon or a spoonful of bourbon or strong coffee to the filling.
- Walnut version: if pecans are hard to find, walnuts work well; toast them lightly to soften their bitterness.
Serving ideas for the Thanksgiving table
Serve slim slices with softly whipped cream or vanilla ice cream, and a pot of black coffee or spiced tea. It sits beautifully beside pumpkin pie: offer both and let guests choose, or give each person a small slice of each. For a full menu, pair it with a roast turkey, mashed potatoes, cranberry sauce and stuffing.
Make ahead and storage
Bake the pie one day ahead and keep it, loosely covered, at cool room temperature. Because it contains eggs, refrigerate it after 24 hours and bring it back to room temperature before serving. Wrapped well, it keeps in the fridge for up to 4 days. You can also freeze the baked, fully cooled pie for up to a month; thaw it overnight in the fridge.
Good to know: this pie is very sweet and rich, and it contains tree nuts, eggs, gluten and dairy, so check with guests who have allergies before serving.

Method
Heat the oven to 175 °C (350 °F). Press the crust into a pie tin, prick the base, line with parchment and pie weights, and bake for 10 minutes. Remove the weights and set aside.
Toast the pecans on a tray for 8 minutes, then let them cool.
Whisk the eggs with the brown sugar until smooth. Stir in the syrup, melted butter, vanilla and salt.
Scatter the pecans over the warm crust and pour the filling over them.
Bake for 45–55 minutes, shielding the edges with foil if they brown too fast, until the edges are set and the centre jiggles slightly.
Cool completely on a rack for at least 3 hours before slicing. Serve with whipped cream or vanilla ice cream.
Tips
- The pie firms up as it cools, so do not bake until the centre is completely still.
- Make it a day ahead; refrigerate after 24 hours and serve at room temperature.
