Pumpkin pie gets most of the Thanksgiving attention, but a pumpkin cheesecake may be the better choice for a host: it is richer and creamier, and it actually improves after a night in the fridge. That makes it ideal for the American holiday on November 26, when the oven is already crowded and every make-ahead dish is a gift to yourself.
This version pairs a buttery graham cracker crust with a smooth filling of cream cheese, pumpkin puree, cinnamon, ginger and nutmeg. It is baked gently in a water bath so the top stays smooth and the texture stays velvety rather than dry.
Tips for a smooth, crack-free cheesecake
- Bring everything to room temperature. Cold cream cheese leaves lumps, and lumps mean over-mixing later. Take the cream cheese and eggs out at least an hour ahead.
- Blot the pumpkin. Canned or homemade puree holds a lot of water. Press it between paper towels, or cook it in a pan for a few minutes, so the filling sets firmly.
- Mix on low speed. Beat the cream cheese and sugar until smooth, then add the eggs one at a time and stop as soon as each disappears. Too much air causes puffing and cracks.
- Use a water bath. Wrap the springform pan in two layers of foil and set it in a roasting pan with hot water halfway up the sides. The steam gives even, gentle heat.
- Look for a slight wobble. The edges should be set and the centre should jiggle like gelatin when you nudge the pan. It firms up as it cools.
- Cool slowly. Turn off the oven, crack the door and leave the cheesecake inside for one hour, then chill it for at least 6 hours, ideally overnight.
Variations
- Gingersnap crust: swap the graham crackers for gingersnap cookies for a spicier base.
- Pecan crust: replace a quarter of the crumbs with finely chopped toasted pecans.
- Maple version: use part maple syrup in place of some of the sugar, reducing the amount slightly.
- Persian twist: add a pinch of ground cardamom and a few drops of rose water, and top with chopped pistachios.
- Mini cheesecakes: bake in a muffin tin with paper liners for about 20 minutes. They are easy to serve at a buffet.
Serving ideas for your Thanksgiving table
Serve chilled slices with lightly sweetened whipped cream, a spoonful of cranberry sauce, or a drizzle of caramel and toasted pecans. Pair it with coffee, spiced tea or warm apple cider. If you are offering several desserts, cut thin slices: cheesecake is rich, and a small wedge goes a long way next to a slice of pie.
Storage and make-ahead
Cheesecake is one of the best make-ahead desserts. Covered, it keeps in the refrigerator for up to 4 days, so you can bake it on Monday for Thursday. To freeze, chill it fully, freeze whole or in slices on a tray, then wrap tightly and store for up to 1 month. Thaw overnight in the fridge. Add toppings just before serving so the surface stays neat.
Because it contains eggs and dairy, do not leave the cheesecake at room temperature for more than two hours when serving.

Method
Heat the oven to 160°C (325°F) and wrap the outside of a 23 cm (9 inch) springform pan in two layers of foil.
Mix the graham cracker crumbs, melted butter and sugar until they feel like wet sand, then press firmly into the base of the pan and up the sides slightly.
Bake the crust for 10 minutes, then let it cool while you make the filling. Keep the oven on.
Beat the cream cheese and sugar on low speed until completely smooth, scraping the bowl often.
Mix in the pumpkin puree, sour cream, cornstarch, vanilla, cinnamon, ginger, nutmeg and salt until just combined.
Add the eggs one at a time on low speed, stopping as soon as each one is blended in.
Pour the filling over the crust and tap the pan gently on the counter to release air bubbles.
Set the pan in a roasting pan and pour hot water halfway up the sides of the springform.
Bake for 65 to 75 minutes, until the edges are set and the centre still wobbles slightly.
Turn off the oven, crack the door and leave the cheesecake inside for 1 hour.
Remove it from the water bath, cool to room temperature, then chill for at least 6 hours or overnight before slicing.
Tips
- Blot the pumpkin puree well so the filling sets firmly.
- Dip a knife in hot water and wipe it between cuts for clean slices.
- Keeps up to 4 days in the fridge or 1 month in the freezer.
