Saffron, pistachio and rose water are the flavours of Persian celebration sweets, and they work beautifully inside a classic baked cheesecake. This version is creamy, lightly floral and golden, and it is made entirely the day before, which is exactly what you want when Yalda Night, the longest night of the year on December 21, is a house full of guests. It also suits any winter dinner party or holiday table.

Why this cheesecake works for Yalda

Yalda tables are built around red pomegranate, nuts and dried fruit. A pale golden slice with a green pistachio crust and a ruby scatter of pomegranate seeds fits that table perfectly, and the cake needs no last-minute work. It also slices cleanly, so it is easy to serve to a crowd.

Tips for a smooth, crack-free cheesecake

  • Bloom the saffron properly. Grind a generous pinch with a little sugar, then steep it in 3 tablespoons of hot water for 15 minutes. The colour and aroma come from this liquid, not from dry threads.
  • Use room-temperature ingredients. Cold cream cheese stays lumpy, and over-beating to fix it adds air that causes cracks. Beat on low speed and scrape the bowl often.
  • Grind the pistachios finely. Unsalted, shelled pistachios ground to a coarse flour blend into the batter without making it gritty. Keep some whole nuts for the top.
  • Bake gently. A low oven and a wide pan of hot water on the rack below keep the surface from drying. The centre should still wobble slightly when you take it out.
  • Cool slowly. Leave the cake in the switched-off oven with the door ajar for an hour, then chill for at least six hours, ideally overnight.
  • Slice with a hot knife. Dip the knife in hot water and wipe it between cuts for neat edges.

Variations

  • Swap the biscuit base for crushed cardamom shortbread for a more Persian flavour.
  • Replace the sour cream with thick strained yogurt for a tangier filling.
  • Skip the rose water if you prefer a purely saffron and vanilla taste, or use only half a tablespoon if your rose water is strong.
  • Bake the same batter in a muffin tin lined with paper cases for individual cheesecakes; they take about 20 to 25 minutes.

Serving ideas and a Yalda menu

Serve thin slices with pomegranate seeds, chopped pistachios and a few dried rose petals. Offer hot black tea or cardamom tea on the side, as tradition suggests, and place the cheesecake next to a platter of ajil (mixed nuts and dried fruit), watermelon or pomegranate. For a fuller menu, pair it with a herb rice dish or a walnut and pomegranate stew, then let the dessert be the one thing you have already finished.

Storage

Cover and refrigerate for up to four days. To freeze, chill the cake completely, freeze whole or in slices on a tray until firm, then wrap well; it keeps for about two months. Thaw overnight in the refrigerator. Add the pomegranate and pistachio topping just before serving so the colours stay bright.

Who should be careful: this cake contains dairy, eggs, gluten and tree nuts, so it is not suitable for guests with those allergies. It is also a rich dessert, best enjoyed in small slices.

    Method

    1. Heat the oven to 160°C (320°F) and line the base of a 23 cm springform pan with parchment.

    2. Mix the biscuit crumbs, ground pistachios and melted butter, press firmly into the base and slightly up the sides, and bake for 10 minutes. Let it cool.

    3. Grind the saffron with a pinch of the sugar, steep it in 3 tablespoons of hot water for 15 minutes, and let it cool slightly.

    4. Beat the cream cheese and sugar on low speed until smooth, then add the sour cream, flour, ground pistachios, vanilla and rose water.

    5. Beat in the eggs one at a time, then stir in the saffron liquid until the batter is an even golden colour.

    6. Pour the filling over the crust, tap the pan gently to release air bubbles, and set it on the middle rack above a pan of hot water.

    7. Bake for 55 minutes, until the edges are set and the centre still wobbles slightly.

    8. Turn off the oven, open the door slightly and leave the cake inside for 1 hour, then cool completely at room temperature.

    9. Chill for at least 6 hours or overnight, then run a thin knife around the edge and release the pan.

    10. Top with chopped pistachios, pomegranate seeds and rose petals, and slice with a hot, dry knife.

    Tips

    • Use room-temperature ingredients and beat on low speed to prevent cracks.
    • Chilling overnight gives the cleanest slices and the best flavour.
