Keyk-e mast is the cake many Iranian homes bake without a recipe: yogurt, eggs, sugar, oil and flour, stirred in one bowl and ready in under an hour. With autumn tea season here and Yalda Night gatherings only a couple of months away, it is a reliable, make-ahead cake that needs no mixer and no special ingredients.

Why it works

Yogurt adds moisture and a gentle tang, while oil keeps the crumb tender for days. Lemon zest and a little cardamom give it the familiar Persian tea-table aroma without making it heavy. The result is a soft, tight crumb that slices cleanly, perfect with black tea.

Tips for a soft cake

  • Use room-temperature eggs and yogurt so the batter blends smoothly.
  • Use plain, full-fat or low-fat yogurt without sugar; very thin yogurt can make the cake wet, so stir it well first.
  • Whisk the wet ingredients first, then fold in the flour just until no dry streaks remain. Overmixing makes the cake tough.
  • Grease the pan and line the bottom with baking paper so the cake releases cleanly.
  • Do not open the oven in the first 30 minutes. Test with a skewer: it should come out clean or with a few dry crumbs.

Variations

  • Orange and saffron: swap lemon zest for orange zest and add 2 tablespoons of bloomed saffron water.
  • Rose water: replace the vanilla with 1 teaspoon of rose water and top with crushed pistachios.
  • Poppy seed: add 2 tablespoons of poppy seeds for a classic Persian touch.
  • Glaze: stir 2 tablespoons of lemon juice into half a cup of icing sugar and spoon over the cooled cake.

Serving ideas

Serve slices warm or at room temperature with hot tea, fresh fruit or a spoon of whipped cream. For a Yalda table, place it beside pomegranate, nuts and dried fruit. It also works well as a lunchbox treat or a simple birthday cake topped with berries.

Storage

Keep the cake covered at room temperature for up to 3 days, or in the fridge for 5 days (bring to room temperature before serving). Wrapped slices freeze well for up to 2 months; thaw overnight at room temperature.

Note: the cake contains eggs, dairy and wheat; people with those allergies should avoid it or use tested substitutes.

Method

  1. Heat the oven to 175°C (350°F) and grease a 23 cm round or 25 cm loaf pan, lining the bottom with baking paper.

  2. Whisk the yogurt, eggs, sugar, oil, vanilla and lemon zest in a large bowl until smooth.

  3. Mix the flour, baking powder, cardamom and salt, then fold into the wet mixture just until no dry streaks remain.

  4. Pour the batter into the pan and smooth the top.

  5. Bake for 40 to 45 minutes, until golden and a skewer comes out clean.

  6. Cool in the pan for 10 minutes, then turn out onto a rack and cool completely before slicing.

Tips

  • Do not overmix the batter or the cake will turn tough.
  • Stir thin yogurt well, or drain it briefly, so the cake is not wet.
  • Add a lemon glaze once the cake is fully cool.
