Scalloped potatoes are thin slices of potato baked in a garlicky cream sauce until tender, bubbling and golden on top. It is a classic Thanksgiving and Christmas side dish in the US, Canada and the UK, and it is also one of the easiest to prepare ahead, which is exactly why it earns a place on a busy holiday table. With Thanksgiving on November 26, now is a good time to test your recipe.

Why this version works

Most failed scalloped potatoes have the same problems: crunchy slices in the middle, a curdled sauce or a greasy pool on top. This method avoids all three by warming the potatoes briefly in the cream before baking. The starch from the slices thickens the sauce as it heats, so you do not need flour, and the potatoes start cooking before they even reach the oven.

Tips for the best result

  • Choose the right potato. Yukon Gold (or any all-purpose, waxy-leaning potato) holds its shape and tastes buttery. Russets work too but give a softer, more crumbly result.
  • Slice evenly. Aim for slices about 3 mm (1/8 inch) thick. A mandoline is the easiest way; use the guard. Do not rinse the slices, because the surface starch thickens the sauce.
  • Simmer gently. Cream that boils hard can split. Keep it at a gentle bubble and stir often so nothing sticks.
  • Cover, then uncover. Foil traps steam so the slices cook through; removing it for the last 30 minutes browns the cheese.
  • Let it rest. Ten to fifteen minutes out of the oven lets the sauce settle so you can cut clean squares.

Variations

  • Gratin Dauphinois style: skip the cheese in the sauce and rub the dish with garlic for a lighter French version.
  • Smoky: swap half the Gruyère for smoked Gouda, or scatter crisp bacon between the layers.
  • Herby: add chopped rosemary or chives on top just before serving.
  • Lighter: use half whole milk and half cream, though the sauce will be a little looser.

Make-ahead and storage

Assemble the dish completely, cool it, cover tightly and refrigerate for up to 24 hours. Add 10 to 15 minutes to the covered baking time because the dish starts cold. Leftovers keep in the fridge for 3 to 4 days; reheat covered at 175°C (350°F) until hot in the middle. Freezing is possible but the sauce can turn grainy, so we prefer to bake fresh or refrigerate.

Serving ideas for your holiday menu

Scalloped potatoes pair beautifully with roast turkey, ham or prime rib. Balance the richness with something bright, such as a crisp Brussels sprout salad or cranberry sauce, and add green beans or roasted carrots for color. Because the oven is often crowded on Thanksgiving, bake this dish first and keep it warm, covered, while the turkey rests; it reheats well and holds its heat for about 30 minutes.

Method

  1. Heat the oven to 175°C (350°F) and butter a 23 by 33 cm (9 by 13 inch) baking dish.

  2. Peel the potatoes and slice them about 3 mm thick, keeping the slices unrinsed.

  3. Melt the butter in a large pot over medium heat, add the garlic and cook for 30 seconds until fragrant.

  4. Add the cream, milk, salt, pepper, nutmeg and thyme, then bring to a gentle simmer.

  5. Add the potato slices and simmer gently for 5 minutes, stirring often, until the sauce thickens slightly.

  6. Spread half the potatoes and sauce in the dish, sprinkle with half the Gruyère, then add the remaining potatoes and sauce.

  7. Cover tightly with foil and bake for 45 minutes.

  8. Remove the foil, top with the remaining Gruyère and the Parmesan, and bake for 30 minutes more until golden and a knife slides in easily.

  9. Rest for 10 to 15 minutes before cutting into squares and serving.

Tips

  • Do not rinse the sliced potatoes, because their starch thickens the sauce.
  • To make ahead, assemble, cool, cover and refrigerate up to 24 hours, then add 10 to 15 minutes to the covered baking time.
