Gingerbread is the flavour of the season, and this cheesecake turns it into a dessert you can serve a crowd. A crisp gingersnap crust holds a silky, tangy filling scented with molasses, ginger, cinnamon and cloves. It tastes like a gingerbread cookie and a classic New York cheesecake in one slice. Because it needs a full night in the fridge, it is the ideal make-ahead centrepiece for Christmas or any winter dinner party.
Why this cheesecake works
Molasses is the secret. It gives the filling a deep, slightly bitter caramel note and a lovely tan colour, while brown sugar keeps the texture soft. Sour cream adds tang and makes the slices creamy rather than dense. A gentle water bath and a slow cool-down in the oven prevent cracks, so you do not need to hide the top under toppings.
Tips for a smooth, crack-free result
- Use full-fat block cream cheese (not the spreadable tub kind), and let it sit at room temperature for about an hour. Cold cream cheese leaves lumps.
- Mix on low speed and stop as soon as the eggs are blended. Too much air makes the top puff and then crack.
- Wrap the pan in foil before the water bath. Use two sheets of wide, heavy-duty foil so no water seeps into the crust.
- Look for a wobble. The edges should be set while the centre still jiggles like gelatin. It firms up as it chills.
- Cool slowly. Switch the oven off, prop the door open a crack and leave the cake inside for an hour. Then chill at least 6 hours, ideally overnight.
- Slice cleanly with a long knife dipped in hot water and wiped dry between cuts.
Variations
- No gingersnaps? Use graham crackers or digestive biscuits and add 1 teaspoon ground ginger and 1/2 teaspoon cinnamon to the crumbs.
- Extra festive: top with whipped cream, a dusting of cinnamon and a few candied ginger pieces or cranberries.
- Chocolate version: drizzle with melted dark chocolate or a swirl of salted caramel.
- Mini cheesecakes: bake in a lined muffin tin for about 22 minutes, no water bath needed.
Serving ideas
Serve thin slices after a rich main course, with hot coffee, spiced tea or mulled cider. A spoonful of tart cranberry sauce or poached pears balances the sweetness. For a Christmas dessert table, pair it with shortbread and a bowl of clementines.
Storage
Keep the cheesecake covered in the fridge for up to 5 days. To freeze, chill it fully, freeze slices on a tray, then wrap them well; they keep for 2 months. Thaw overnight in the fridge. Because it contains eggs and dairy, do not leave it out for more than two hours.

Method
Heat the oven to 160°C (325°F). Wrap the outside of a 23 cm (9 inch) springform pan in two layers of heavy-duty foil.
Mix the cookie crumbs, melted butter and brown sugar, press firmly into the base and slightly up the sides, and bake for 10 minutes. Let it cool while you make the filling.
Beat the cream cheese on low speed until completely smooth, then add the brown sugar and molasses and mix until combined.
Mix in the sour cream, flour, spices, salt and vanilla, then add the eggs one at a time, mixing only until each disappears.
Pour the filling over the crust and tap the pan gently on the counter to release air bubbles.
Place the pan in a roasting tin and pour in hot water to reach halfway up the pan. Bake for about 65 minutes, until the edges are set and the centre still wobbles slightly.
Turn off the oven, crack the door open and leave the cheesecake inside for 1 hour.
Remove it from the water bath, cool to room temperature, then cover and chill for at least 6 hours or overnight before slicing.
Tips
- Use block cream cheese, not spreadable.
- Mix on low speed to avoid cracks.
- Dip the knife in hot water between slices.
