Banana pudding is one of the most-searched desserts this spring and summer. This version has a real stovetop custard, so the wafers soften into the layers overnight.

Method

  1. Whisk the sugar, flour and salt in a saucepan. Whisk in the milk and egg yolks.

  2. Cook over medium heat, stirring constantly, until thick enough to coat a spoon, about 8 to 10 minutes.

  3. Take off the heat and stir in the butter and vanilla. Let it cool for 10 minutes.

  4. Spread a little custard in a 2-litre (8 by 8 inch) dish. Layer wafers, sliced bananas and custard. Repeat, finishing with custard.

  5. Press plastic wrap onto the surface and chill for at least 4 hours.

  6. Whip the cream with the sugar to soft peaks. Spread over the pudding just before serving, and add a few wafers on top.

Tips

  • Layer the bananas just before chilling so they do not brown.
  • The pudding is best the next day, when the wafers have softened.
