No Thanksgiving table feels complete without a basket of warm, soft dinner rolls. They soak up gravy, hold a slice of turkey, and are the one thing guests reach for twice. With Thanksgiving on November 26 this year, now is a good time to practise a roll recipe that you can mostly prepare days ahead, so the oven and your attention stay free on the day itself.
Why this dough works
This is an enriched dough: milk, butter, an egg and a little sugar make the crumb tender and the crust thin and golden. A gentle, slightly sticky dough gives the softest rolls, so resist adding too much flour while kneading. The dough should be smooth and tacky, not dry.
Tips for fluffy rolls
- Warm, not hot, milk. About 40 °C (105 °F) wakes the yeast. Hotter than that can kill it.
- Knead until the windowpane test passes. Stretch a small piece; it should thin out without tearing. Mixer: about 8 minutes; by hand: 12 to 15.
- Weigh the dough balls. Equal pieces (about 55 g each) bake evenly and look neat in the pan.
- Pack them snugly. Rolls that touch while rising bake up tall and pull apart in soft pieces.
- Brush with butter twice. Once before baking for colour, once straight out of the oven for a soft, shiny top.
Make-ahead schedule
- Two days before: make the dough, shape the rolls, cover the pan tightly and refrigerate. The slow, cold rise adds flavour.
- Thanksgiving morning: let the pan stand at room temperature for 45 to 60 minutes until puffy, then bake while the turkey rests.
- Freezer option: bake fully, cool, freeze in a bag for up to 1 month, and reheat wrapped in foil at 160 °C (325 °F) for 10 to 12 minutes.
Variations
- Herb and garlic: brush the baked rolls with melted butter mixed with chopped parsley, thyme and a little garlic.
- Honey butter top: stir a spoonful of honey into the finishing butter.
- Whole wheat blend: replace up to one third of the flour with whole wheat flour and add a splash more milk.
- Sesame or nigella seeds: a nod to Persian breads; sprinkle on after the egg wash.
Serving ideas for the Thanksgiving table
Serve the rolls warm in a cloth-lined basket with soft butter and a small bowl of cranberry sauce. Leftover rolls make excellent mini sandwiches the next day with turkey, a little stuffing and cranberry. They also pair nicely with a bowl of autumn pumpkin soup.
Storage
Keep cooled rolls in an airtight bag at room temperature for up to 2 days. For longer storage, freeze. Refresh day-old rolls with a few minutes in a warm oven.
Note: this recipe contains wheat, milk and egg. It is vegetarian.
