A silky, spiced American pumpkin pie with a flaky butter crust. Make it a day ahead for Thanksgiving; it serves 8.

Classic Pumpkin Pie from Scratch: Make-Ahead Thanksgiving Dessert

Pumpkin pie is the dessert most associated with the American Thanksgiving table, and with the holiday on November 26 this year, now is a good time to practise. The filling is simply pumpkin purée, eggs, milk and warm spices baked into a smooth custard. The good news for busy hosts: it tastes better after a night in the fridge, so it is one less thing to do on the big day.

Tips for a Silky Pie

  • Use plain pumpkin purée, not “pumpkin pie filling”, which is already sweetened and spiced. Home-roasted pumpkin works too, but drain it well in a sieve so the filling is not watery.
  • Blind-bake the crust for 15 minutes with pie weights so the bottom stays crisp under the wet filling.
  • Do not overbake. The pie is done when the edges are set and the centre still wobbles slightly like gelatin. It firms up as it cools, and overbaking causes cracks.
  • Cool slowly at room temperature for about two hours before refrigerating, to avoid a cracked surface.
  • Whisk gently. Beating too much air into the filling creates bubbles and a puffy, uneven top.

Variations

  • Swap half the brown sugar for maple syrup for a deeper flavour.
  • Add a tablespoon of bourbon or a teaspoon of orange zest to the filling.
  • Press crushed ginger biscuits or graham crackers into the pan instead of making pastry for a no-roll crust.
  • Use full-fat coconut milk instead of evaporated milk for a dairy-free filling, and use cold coconut oil or a dairy-free butter block in the crust.

Serving Ideas for the Thanksgiving Table

Serve slices cold or at room temperature with lightly sweetened whipped cream, a spoonful of crème fraîche or a scoop of vanilla ice cream. A sprinkle of toasted pecans adds crunch. Pair it with hot coffee, black tea with cinnamon or a cup of spiced apple cider. If your menu is already full, pumpkin pie sits comfortably next to make-ahead sides such as mashed potatoes and cranberry sauce, since everything can be prepared earlier.

Storage

Keep the pie covered in the refrigerator for up to 4 days. Because it contains eggs and milk, do not leave it out for more than two hours. The baked pie can also be frozen whole for up to a month: wrap it well and thaw overnight in the fridge. Whipped cream is best added just before serving.

    Method

    1. Make the crust: mix flour, sugar and salt, rub in the cold butter until pea-sized crumbs form, then add ice water a spoonful at a time until the dough just holds. Shape into a disc and chill 1 hour.

    2. Roll out the dough to fit a 9-inch (23 cm) pie pan, trim and crimp the edge, and prick the base with a fork. Chill 15 minutes.

    3. Heat the oven to 425°F (220°C). Line the crust with parchment and pie weights and bake 15 minutes. Remove weights and bake 5 more minutes. Lower the oven to 350°F (175°C).

    4. Whisk the pumpkin, brown sugar, spices and salt. Add eggs, yolk, evaporated milk and vanilla and whisk gently until smooth.

    5. Pour the filling into the warm crust and bake 40-45 minutes, until the edges are set and the centre jiggles slightly.

    6. Cool at room temperature for 2 hours, then refrigerate at least 4 hours or overnight. Serve cold with whipped cream.

    Tips

    • Cover the crust edge with foil if it browns too fast.
    • Make the pie up to 2 days ahead; add whipped cream only when serving.
