Pigs in a blanket are small sausages wrapped in buttery pastry and baked until golden. They are salty, flaky and dippable, which is why they disappear first from every party table. Holiday season is when they are most searched for, and they fit Thanksgiving appetizer spreads, Christmas open houses, game days and kids’ parties equally well.

Which wrapper works best?

In the US the classic version uses canned crescent roll dough. In the UK, Europe and Australia, ready-rolled puff pastry gives the same result and is easy to find in the freezer aisle. This recipe uses puff pastry because it is available almost everywhere and bakes up taller and flakier. Thaw it in the fridge, not on the counter, so it stays cold and easy to handle.

Tips for the best result

  • Keep the pastry cold. If it softens and sticks, slide it onto a tray and chill it for 10 minutes before cutting.
  • Pat the sausages dry. Surface moisture makes the pastry soggy and stops it from sealing.
  • Roll snugly but do not stretch. Stretched dough shrinks in the oven and the sausage pops out.
  • Place the seam side down and leave space between pieces so the heat can reach every side.
  • Brush with egg wash for a deep golden shine; it also helps seeds stick.

Variations

  • Cheesy: lay a thin stick of cheddar beside each sausage before rolling.
  • Everything-bagel: sprinkle with everything bagel seasoning instead of sesame seeds.
  • Mustard-brushed: spread a thin layer of Dijon on the pastry before rolling for a sharper bite.
  • Vegetarian: use plant-based mini sausages or small cooked mushrooms. Check the pastry label, as some brands contain animal fat.
  • Mummies for Halloween: cut the pastry in thin strips and wrap loosely, leaving a gap for two mustard dot eyes.

Serving ideas

Serve warm with honey mustard (equal parts mustard and honey, with a spoonful of mayonnaise or yogurt), ketchup, barbecue sauce or a mild cheese dip. For a holiday appetizer table, pair them with a cheese board, a bowl of cranberry sauce for dipping, crunchy vegetables and a sparkling non-alcoholic punch.

Make ahead and storage

Assemble the rolls, place them on a tray and refrigerate, covered, for up to 24 hours, then brush with egg and bake just before guests arrive. You can also freeze them unbaked on a tray, move them to a freezer bag, and bake from frozen, adding 5 to 7 minutes. Baked leftovers keep in the fridge for 3 days; reheat in a 180°C / 350°F oven for 8 minutes to re-crisp the pastry. Avoid the microwave, which makes the pastry soft.

Cocktail sausages are already cooked, so you only need to bake until the pastry is deep golden. If you use raw sausages, cook them first or bake longer until they reach 74°C / 165°F inside.

Method

  1. Heat the oven to 200°C / 400°F (180°C fan) and line a large baking tray with baking paper.

  2. Unroll the cold puff pastry on a lightly floured surface and cut it into 24 long triangles or strips, about 2 x 4 inches (5 x 10 cm) each.

  3. Pat the cocktail sausages dry with paper towels. If you like, brush each strip of pastry with a thin layer of Dijon mustard.

  4. Place a sausage at the wide end of each triangle and roll it up snugly without stretching the pastry.

  5. Arrange the rolls seam side down on the tray, about 2 cm apart, then chill for 10 minutes if the pastry feels soft.

  6. Beat the egg with the water, brush it over the pastry and sprinkle with sesame seeds.

  7. Bake for 16 to 18 minutes, until puffed and deep golden brown.

  8. Rest for 5 minutes and serve warm with honey mustard, ketchup or cheese dip.

Tips

  • Keep the pastry cold for the flakiest layers.
  • Assemble up to 24 hours ahead and bake just before serving.
  • Freeze unbaked and bake from frozen, adding 5 to 7 minutes.
