Bananas have become one of the most talked-about ingredients in home desserts this year. Food media roundups for 2026 place them near the top of the trend list, appearing in everything from nice cream to baked goods and drinks. They are cheap, available all year and can sweeten a dessert with very little added sugar.
Why bananas work so well in desserts
A ripe banana is naturally sweet and soft, so it can replace part of the sugar and some of the fat in many recipes. It also adds potassium and fiber, which makes these desserts a little more filling than their sugary versions. As bananas ripen, their starch turns into sugar: green bananas are starchy, yellow ones balanced, and spotted brown bananas very sweet and aromatic, the best for baking.
How ripe should the banana be?
- Yellow with a few brown spots: good for slicing into parfaits and toast.
- Heavily spotted or brown: best for mashing into cookies, muffins and bread; they have the most sweetness and flavor.
- Frozen peeled slices: the base of nice cream.
1. Banana nice cream
Freeze peeled ripe bananas in slices overnight. Blend them in a food processor until smooth and creamy (scrape down the sides and be patient: it first looks crumbly), then add a spoon of peanut butter or cocoa powder, a splash of milk or a pinch of cinnamon. It takes about five minutes and needs no ice cream maker. Serve right away as soft-serve, or freeze for 30 minutes for a firmer scoop.
2. Two-ingredient banana oat cookies
Mash two ripe bananas and mix with one cup (90 g) of rolled oats. Add cinnamon, vanilla or chopped dark chocolate if you like. Drop spoonfuls on a lined tray and bake at 180 degrees Celsius for about 15 minutes. They are soft and chewy, not crisp, and keep 3 days in the fridge. See also our soft pumpkin cookies.
3. Caramelized banana toast
Slice a banana in half lengthwise and cook it in a little butter over medium heat for 2 minutes per side until golden. Serve on toasted whole-grain bread with a pinch of sea salt, a drizzle of honey or yogurt.
4. Frozen banana bites
Dip banana chunks on sticks in melted dark chocolate, sprinkle with crushed nuts, and freeze for an hour. They are a good option for children and for a quick afternoon treat. Keep them in a closed container in the freezer for up to 2 weeks. Small pieces can be a choking risk for very young children, so cut them in sizes that suit their age.
5. Banana and yogurt parfait
Layer plain Greek yogurt, sliced banana, and granola in a glass. Add a little honey only if needed; the banana usually provides enough sweetness. Add a spoon of chia seeds or chopped walnuts for fiber and crunch. For another yogurt dessert, see frozen yogurt fruit clusters.
Cutting sugar with banana
- In muffins, cakes and pancakes, 1 mashed ripe banana (about 1/2 cup) can replace 1/4 to 1/2 cup of sugar and some oil or butter.
- Reduce the other liquid slightly, because banana adds moisture.
- Banana flavor is strong; pair with cinnamon, cardamom, chocolate, peanut butter or coffee.
Nutrition (1 medium banana, about 118 g)
About 105 calories, 27 g carbohydrate (14 g sugar), 3 g fiber, 420 mg potassium, vitamin B6 and vitamin C. Bananas are fruit sugar plus fiber, but they still raise blood sugar; people with diabetes should count them as carbohydrate and combine them with protein such as yogurt or nuts.
How to store and ripen bananas
- Keep bananas at room temperature, away from other fruit that ripens them faster (apples, tomatoes).
- To slow ripening, wrap the stems in plastic wrap or separate the bananas. The skin turns brown in the fridge but the flesh stays fine.
- To speed ripening, put bananas in a paper bag with an apple for a day.
- Freeze overripe bananas, peeled and sliced, in a bag for up to 3 months for smoothies and baking.
- Oven-ripen: bake unpeeled bananas at 150°C for 15 to 20 minutes until the skins are black for instant baking bananas.
Who should be careful?
People on potassium-restricted diets for kidney disease should ask their doctor. A few people are allergic to latex and also react to bananas.
