As the evenings turn cold, Persian kitchens fill with the smell of cinnamon, saffron and caramelised onions. Adas polo is the dish behind that aroma: fluffy basmati rice layered with tender lentils, sweet raisins and dates, and a golden crust at the bottom of the pot. It is a one-pot centrepiece that feeds a crowd, costs very little, and is just as good on a weeknight as it is on a holiday table, including the long nights of Yalda that are coming up in December.
What makes adas polo special
Adas means lentils, and polo is Persian steamed rice. Unlike a simple lentil pilaf, the rice is first parboiled, then layered with the lentils and steamed slowly so every grain stays separate. The sweet fruit and warm spices balance the earthiness of the lentils, and a scatter of saffron gives the colour that makes the plate look festive.
Tips for the best result
- Rinse and soak the rice. Wash basmati until the water runs almost clear, then soak it for at least 30 minutes with a spoonful of salt. This gives long, non-sticky grains.
- Do not overcook the lentils. Simmer them only until tender but still holding their shape, about 15 to 20 minutes. Mushy lentils turn the rice heavy.
- Parboil the rice briefly. Boil until the grains are soft outside but still firm in the centre when bitten, around 6 to 8 minutes, then drain well.
- Bloom the saffron. Grind it with a pinch of sugar, then dissolve in a few spoonfuls of hot water. Use it to colour part of the rice and the tahdig.
- Wrap the lid. A clean kitchen towel under the lid absorbs steam and prevents drips, which is the secret of dry, fluffy rice.
- Do not stir. Layer gently, make a few steam holes with a spoon handle, and let low heat do the work.
Variations
- With meat: brown a little ground beef or lamb with the onions and layer it in. It makes a heartier dinner.
- With chicken: serve alongside saffron chicken, a classic pairing.
- Vegetarian and vegan: the recipe card is meat-free as written; use oil instead of butter to make it vegan.
- Fruit swaps: replace dates with dried barberries, chopped dried apricots or golden raisins.
- Tahdig options: a thin layer of sliced potato or a piece of lavash gives a crisp base if you prefer it to the yogurt version.
Serving ideas
Serve adas polo with plain yogurt or a cucumber and mint yogurt, a fresh herb plate (sabzi khordan), and torshi (Persian pickles). For a fuller autumn or Yalda menu, add a pomegranate salad and finish with fruit and nuts. It also works well as a make-ahead dish for guests, since it holds its heat nicely wrapped in the pot.
Storage
Cool leftovers within two hours and keep them in an airtight container in the refrigerator for up to three days. Reheat with a splash of water in a covered pan or in the microwave until steaming hot. Cooked rice can be frozen in portions for up to a month; reheat from thawed.
Lentils and rice together make a satisfying, filling meal that stretches a small budget a long way, which is why adas polo remains a family favourite across Iran.

Method
Rinse the rice until the water runs almost clear, then soak it in cold water with a spoonful of salt for 30 minutes.
Simmer the lentils in plenty of water for 15 to 20 minutes until tender but intact, then drain.
Fry the onions in 2 tablespoons of butter until deep golden, then stir in the turmeric, cinnamon and cardamom.
Add the raisins and dates and cook for 2 minutes, then fold in the lentils and season with salt.
Boil the soaked rice in salted water for 6 to 8 minutes until soft outside and firm inside, then drain.
Mix a few spoonfuls of rice with the yogurt and half of the saffron water, and spread it over the bottom of a heated non-stick pot with the remaining butter.
Layer the rice and the lentil mixture in alternating mounds, finishing with rice, and poke steam holes with a spoon handle.
Drizzle the rest of the saffron water on top, wrap the lid in a clean towel, and cook on medium for 5 minutes then low for 45 minutes.
Rest the pot for 5 minutes, then serve the rice and lift out the crisp tahdig to serve alongside.
Tips
- Do not overcook the lentils or the rice will turn heavy.
- Wrap the pot lid in a towel for dry, fluffy rice.
- Use oil instead of butter for a vegan version.
