🔊 Cook mode: big steps, timers and voice control (say “next”), hands-free.
Few party appetizers look as elegant for so little effort as a shrimp cocktail. Cold, juicy shrimp are poached gently in a fragrant lemon broth, chilled, and served with a bright, spicy red sauce made from ketchup and horseradish. It is a retro classic that is back on holiday tables, and with New Year’s Eve about two months away it is a perfect time to practise. Everything can be done a day ahead, so you can enjoy your own party.
What makes it work
The secret to tender, never rubbery shrimp is gentle heat. Instead of boiling them hard, you bring the poaching liquid to a boil, switch off the heat, and let the shrimp cook in the hot water for a few minutes. An immediate ice bath stops the cooking and keeps them snappy and sweet.
Tips for the best result
- Buy the right shrimp. Look for large (16 to 20 per pound) raw shrimp. Frozen is perfectly fine and often fresher than the “fresh” counter; thaw them overnight in the fridge.
- Cook them shell-on if you can. The shells add flavour and protect the meat. Peel after chilling, or peel first and leave the tails on for easy handling.
- Season the water well. It should taste like a mild seawater. Lemon, bay leaf and peppercorns add a clean aroma.
- Do not overcook. Shrimp are done when they curl into a loose “C” and turn pink and opaque. A tight “O” means overcooked.
- Use fresh horseradish sauce. Look for jarred “prepared horseradish” in the refrigerated section near the fish counter. It has far more bite than creamed horseradish.
Variations
- Extra smoky: add a pinch of smoked paprika to the sauce.
- Lighter and fresher: stir a spoonful of finely chopped celery and chives into the sauce.
- Mexican-style: toss the shrimp with lime juice, diced avocado, cucumber and a little hot sauce.
- Lemon-herb dip: for guests who dislike heat, mix Greek yogurt, lemon zest and dill.
Serving ideas for New Year’s Eve
Hang the shrimp around the rim of a chilled glass bowl or a martini glass filled with crushed ice, with the sauce in the middle and lemon wedges on the side. Pair it with a simple appetizer table: crackers, a cheese board, deviled eggs and something sparkling to drink, whether that is Champagne or a non-alcoholic sparkling apple juice. Because everything is cold, you can set the platter out and enjoy the countdown.
Storage and make-ahead
Poach and chill the shrimp up to 24 hours ahead and keep them covered in the coldest part of the fridge. The sauce keeps for up to a week in a jar, and the flavour improves after a day. Serve the shrimp straight from the fridge, and do not leave the platter at room temperature for longer than two hours. Leftover shrimp are excellent in salads or tucked into a sandwich the next day.
Who should be careful: shellfish is a major allergen, so label the dish clearly, and people who are pregnant or have weakened immunity should only eat fully cooked, properly chilled seafood.

Fill a large bowl with ice and cold water and set it next to the stove.
Bring the water to a boil in a large pot with the lemon halves, bay leaves, peppercorns and salt, then simmer for 5 minutes to flavour the water.
Turn off the heat, add the shrimp and stir once.
Let the shrimp sit in the hot water for 3 to 5 minutes, until they are pink, opaque and curled into a loose C.
Lift the shrimp out with a slotted spoon and plunge them into the ice bath for 5 minutes, then drain and pat dry.
Whisk the ketchup, horseradish, lemon juice, Worcestershire sauce, hot sauce and pepper in a bowl, taste and add more horseradish if you like more heat.
Chill the shrimp and sauce for at least 1 hour or up to 24 hours, then serve the shrimp over ice with the sauce and lemon wedges.
Tips
