Thanksgiving is on November 26 this year, and the turkey is the dish everyone worries about. The good news: the most reliable method is also the simplest. A dry brine, which is just salt rubbed onto the bird a day or two ahead, seasons the meat deeply, helps it hold moisture and leaves the skin dry, so it turns crisp and golden in the oven. No buckets of salt water, no fridge space lost to a bag of liquid.
Why dry brining works
Salt draws a little moisture out of the turkey, dissolves in it, and is then reabsorbed into the meat. The proteins relax and hold more juice while roasting. Leaving the bird uncovered in the fridge dries the skin surface, which is the secret to crackling skin.
Tips for the best result
- Thaw fully. A frozen turkey needs about 24 hours in the fridge for every 2 kg. A 5.5 kg bird needs roughly three days, so start early.
- Measure the salt. Use about 1% of the turkey’s weight in coarse kosher salt. If you only have fine table salt, use half the volume, because it is much denser.
- Brine 24 to 48 hours. Rest the turkey on a rack over a tray, uncovered, in the coldest part of the fridge. Keep it away from ready-to-eat foods.
- Do not rinse. Just pat dry before roasting and skip extra salt in the butter.
- Rest at room temperature for 45 minutes before it goes in the oven so it cooks evenly.
- Use a thermometer. Turkey is safe at 74°C (165°F) in the thickest part of the breast and thigh. Pulling it at that point, rather than guessing by time, is what keeps the breast juicy.
- Rest 30 minutes loosely covered with foil before carving. The temperature will rise a few degrees and the juices settle.
Variations
- Citrus and herb: add the zest of two oranges to the salt rub.
- Warm spice: add a teaspoon of smoked paprika and a teaspoon of ground coriander.
- Persian-inspired: mix a teaspoon of turmeric and a pinch of saffron bloomed in two tablespoons of hot water into the butter.
- Smaller gathering: roast a bone-in turkey breast (2 kg) with the same method for about 1 hour 15 minutes.
Storage and leftovers
Refrigerate carved turkey within two hours of cooking, in shallow covered containers, and eat within three to four days. For longer storage, freeze sliced meat with a splash of broth for up to three months. Use the bones for stock, and the leftover meat for sandwiches, soup or a turkey and rice pilaf.
Serving ideas and menu
Pair the turkey with creamy mashed potatoes, herb bread stuffing, cranberry orange sauce, make-ahead gravy and green bean casserole, finishing with pumpkin pie. Most of these can be made ahead, leaving only the turkey and gravy reheating for the day itself.

Method
Thaw the turkey in the fridge (about 24 hours per 2 kg). Remove the neck and giblets and pat the bird very dry with paper towels.
Mix the salt, pepper, thyme and garlic powder. Rub it all over the turkey, including under the skin of the breast and thighs.
Set the turkey on a rack over a tray and refrigerate, uncovered, for 24 to 48 hours.
Take the turkey out 45 minutes before roasting and heat the oven to 220°C (425°F). Do not rinse; pat dry again.
Rub the soft butter over and under the skin. Put the onion, lemon, garlic and herbs in the cavity and tie the legs together.
Place the turkey breast-side up on a rack in a roasting pan. Roast 20 minutes, then reduce the oven to 175°C (350°F).
Roast about 2 hours 15 minutes to 2 hours 45 minutes more, until a thermometer reads 74°C (165°F) in the thickest part of the breast and thigh. Cover the breast loosely with foil if it browns too fast.
Rest the turkey 30 minutes, loosely covered with foil, then carve and serve with gravy.
Tips
- Always rely on a thermometer, not the clock.
- Ovens and birds vary, so start checking the temperature 30 minutes early.
- Skip extra salt in the butter and the gravy until you taste them.
