Few desserts have taken over home kitchens like the Basque burnt cheesecake. Born in San Sebastián in northern Spain, it skips the crust, skips the water bath and even skips the fear of cracks: the dark, blistered top is the whole point. Autumn dinners and holiday tables are the perfect moment for it, because it is made in one bowl, bakes in under an hour and looks impressive with almost no decorating.
Why it works
A very hot oven caramelizes the surface quickly while the inside stays barely set. As it cools, the center firms up into a silky, custard-like texture that tastes like crème brûlée and cheesecake at once. A slight wobble when it comes out of the oven is exactly right.
Tips for the best result
- Room-temperature ingredients. Take the cream cheese, eggs and cream out at least an hour ahead so the batter mixes smooth without lumps.
- Use full-fat cream cheese (the block style, not spreadable) for structure and flavor.
- Mix gently. Beat the cheese and sugar first, add eggs one at a time, then stir in cream and flour on low speed. Too much air makes the cake puff and then sink.
- Line the pan generously. Press one large sheet of baking paper into the pan and let the edges stand above the rim in rumpled folds. This rustic look is part of the charm.
- Trust the dark top. Deep brown, even nearly black in spots, is normal. If it browns too fast, move the rack down one level.
- Cool slowly. Let it rest at room temperature for about an hour, then chill for at least four hours or overnight for clean slices.
Variations
- Saffron and rose: steep a pinch of ground saffron in a spoonful of warm cream and add it to the batter for a Persian-inspired flavor.
- Lemon or orange zest: add one teaspoon of zest for brightness.
- Chocolate: replace one tablespoon of flour with cocoa powder.
- Gluten-free: use cornstarch instead of flour in the same amount.
- Mini version: bake in a muffin tin lined with paper cups for 15 to 18 minutes.
Serving ideas
Serve slightly cool (not ice cold) so the center is soft and creamy. Good partners are roasted plums or pears, a spoonful of pomegranate seeds, fig jam, warm berry compote, or a small cup of strong coffee or black tea. For a dinner party, bake it the day before and slice just before serving.
Storage
Cover and refrigerate for up to four days. The flavor and texture are often better on day two. Let slices sit at room temperature for 20 minutes before serving. Freezing is possible for up to a month: wrap slices tightly and thaw overnight in the refrigerator.
Good to know
This is a rich dessert made with cream cheese, cream and eggs. It is best enjoyed in small slices, and those avoiding dairy, eggs or gluten should check the variations above or choose another recipe.
