When the first cold evenings arrive, a cake that fills the kitchen with the smell of apples and cinnamon feels exactly right. This spiced apple walnut cake is a one-bowl, no-mixer bake: grated apple keeps the crumb moist for days, yogurt adds a gentle tang, and toasted walnuts give it a bit of crunch. It is the kind of cake you can bring to a family gathering, pack into lunchboxes, or serve with tea when guests drop by.

Why this cake works

Apples are at their best and cheapest in autumn, and this recipe uses them two ways: grated into the batter for moisture and sliced thinly on top for a pretty finish. Oil instead of butter means the cake stays soft even when it is cold, so it is easy to make a day ahead. The batter is forgiving, which makes it a good choice for beginners.

Tips for the best texture

  • Choose firm apples. Granny Smith, Golden Delicious or any tart-sweet baking apple holds its shape. Very soft apples turn the crumb gummy.
  • Squeeze lightly. After grating, press the apple gently in a clean towel to remove excess juice, but do not wring it dry; some moisture is welcome.
  • Do not overmix. Fold the flour in until you no longer see white streaks. Overmixing makes cakes tough.
  • Toast the walnuts. Five minutes in a dry pan deepens their flavor and removes any bitterness.
  • Cool before slicing. Fruit cakes set as they cool. Wait at least 30 minutes for clean slices.

Variations

  • Swap walnuts for pecans, almonds or pistachios, or leave them out for a nut-free cake.
  • Add a handful of raisins or dried cranberries, or the grated zest of one orange.
  • Replace the cardamom with ginger or nutmeg for a more classic autumn spice mix.
  • Bake in a loaf pan for a tea-time loaf, or in a muffin tin for 20 to 22 minutes for easy grab-and-go portions.
  • Finish with a simple glaze of powdered sugar and a spoonful of milk or lemon juice.

Serving ideas

Serve warm with a spoonful of plain yogurt or whipped cream, or alongside a pot of black tea or a cinnamon coffee. For a dessert table, cut the cake into small squares and pair it with roasted nuts and seasonal fruit. A dusting of powdered sugar is all the decoration it needs.

Storage

Keep the cake covered at room temperature for up to two days, or in the refrigerator for up to five days; let slices come to room temperature before serving. It also freezes well: wrap individual slices tightly and freeze for up to two months, then thaw overnight in the refrigerator.

Allergy note: this cake contains eggs, wheat, dairy and tree nuts. If you bake for guests or school lunchboxes, check for nut allergies first.

    Method

    1. Heat the oven to 175°C (350°F) and line a 23 cm (9 inch) round pan with parchment paper.

    2. Whisk the flour, baking powder, cinnamon, cardamom and salt in a bowl.

    3. In a large bowl whisk the eggs and sugar for 2 minutes until pale, then whisk in the oil, yogurt and vanilla.

    4. Fold the dry ingredients into the wet mixture until just combined, then fold in the grated apples and the walnuts.

    5. Pour the batter into the pan and spread it evenly. Arrange the apple slices on top and sprinkle with the cinnamon sugar.

    6. Bake for 45 to 50 minutes, until a toothpick inserted in the center comes out clean. Cover loosely with foil if the top browns too fast.

    7. Cool in the pan for 15 minutes, then lift out and cool completely before slicing.

    Tips

    • Toast the walnuts for 5 minutes in a dry pan for deeper flavor.
    • Press the grated apple lightly in a towel but do not dry it completely.
    • The cake keeps 2 days at room temperature and 5 days in the refrigerator.
