A proper Caesar salad is built on a creamy dressing, not a bottled one. This version uses a lightly cooked egg, anchovy and lemon for a balanced, rich flavour.

Method

  1. Boil the egg for 1 minute, then cool it under cold water and crack it into a bowl.

  2. Mash the anchovy and garlic to a paste with a pinch of salt.

  3. Whisk in the egg, lemon juice, mustard and Worcestershire sauce.

  4. Slowly drizzle in the olive oil while whisking until the dressing thickens.

  5. Stir in the grated parmesan.

  6. Toss the romaine with the dressing, then add the croutons and shaved parmesan. Finish with black pepper.

Tips

  • Dress the leaves just before serving so they stay crisp.
  • Use less dressing if you prefer a lighter salad.
