How to Thaw a Turkey Safely: Times by Weight for Thanksgiving

Safe ways to thaw a frozen turkey: fridge, cold water and microwave, with thawing times by weight, a countdown schedule and what to do if you run late.

How to Thaw a Turkey Safely

Thawing the turkey is the step that causes the most Thanksgiving panic. A frozen turkey is large, dense and slow to thaw, and a bird that is still icy in the middle on the big day can ruin the whole schedule. The good news is that the rules are simple: pick the right method, count backwards from dinner, and start earlier than you think.

This guide gives the safe ways to thaw a turkey, thawing times by weight and a simple schedule. The advice follows the food-safety guidance of the U.S. Department of Agriculture (USDA), which recommends only three safe ways to thaw: in the refrigerator, in cold water or in the microwave. Never thaw a turkey on the counter at room temperature.

Why safe thawing matters

Bacteria multiply fastest between 4 C and 60 C (40 F and 140 F), the “danger zone”. A turkey left on the counter can have a warm outer layer in this range for hours while the center is still frozen. That is why the refrigerator and cold-water methods are used: they keep the surface cold while the bird thaws.

Method 1: thaw in the refrigerator (best method)

Thawing in the fridge is the safest and easiest method, but it needs time: allow about 24 hours for every 4 to 5 pounds (about 2 kg) of turkey. Keep the turkey in its original wrapping on a tray to catch drips, on the bottom shelf so juices cannot touch other food.

Turkey weight Refrigerator thawing time
4 to 12 lb (1.8 to 5.4 kg) 1 to 3 days
12 to 16 lb (5.4 to 7.3 kg) 3 to 4 days
16 to 20 lb (7.3 to 9 kg) 4 to 5 days
20 to 24 lb (9 to 10.9 kg) 5 to 6 days

A turkey thawed in the fridge can stay there for 1 to 2 days before you cook it, so you have a safety margin. If you must, it can also be refrozen, although some quality is lost.

Method 2: thaw in cold water (faster)

If you are short on time, thaw the turkey in a clean sink or cooler filled with cold tap water. Keep it in its leak-proof wrapping, submerge it fully and change the water every 30 minutes so it stays cold. Allow about 30 minutes per pound.

Turkey weight Cold-water thawing time
4 to 12 lb 2 to 6 hours
12 to 16 lb 6 to 8 hours
16 to 20 lb 8 to 10 hours
20 to 24 lb 10 to 12 hours

A turkey thawed in cold water must be cooked right away; do not put it back in the freezer or keep it waiting.

Method 3: the microwave (small birds only)

Only very small turkeys or turkey breasts fit in a microwave. Follow your microwave’s instructions for defrosting by weight, and cook the turkey immediately afterward because some areas may already be warm.

Running late? Cook it from frozen

A frozen turkey can be cooked safely without thawing. It simply takes at least 50 percent longer than the time for a thawed turkey. Remove the giblet packet and neck once they loosen after the first hour of roasting. Use a thermometer to make sure every part reaches the safe temperature.

When to start: a simple schedule

  • Thanksgiving is on Thursday, November 26, 2026. For a 16 lb turkey thawed in the fridge, move it from the freezer on Sunday, November 22, or earlier.
  • Add a day of margin. A turkey that is still slightly icy is easy to fix; one that is not thawed at all is not.
  • Check the cavity. If there are still ice crystals inside on the morning of cooking, run cold water through the cavity until they melt.

Cook to the right temperature

Whichever method you use, cook the turkey to a safe internal temperature of 74 C (165 F), measured in the thickest part of the breast, the innermost part of the thigh and the wing joint. Judging by color or juices alone is not reliable, so use a food thermometer. Frequently asked questions

Can I thaw a turkey on the counter?

No. The outer layer of the bird warms into the danger zone before the inside has thawed. Use the fridge, cold water or microwave.

Can I refreeze a thawed turkey?

A turkey thawed in the refrigerator can be refrozen within a day or two without cooking, although the texture may suffer. A turkey thawed in cold water or the microwave must be cooked first.

Do I need to wash the turkey?

No. Rinsing raw poultry spreads bacteria around the sink and kitchen and does not make it safer. Cooking to the right temperature kills bacteria.
